Legumes (Beans, Peas and Lentils)

Legumes contain high amounts of protein and are a great alternative to meat, however to make a "complete protein" they need to be combined with other foods. This is very easy to do and can be done over a few meals. Legumes also contain good fats, carbohydrates and are great source of potassium, calcium, iron, and some B vitamins. Sprouted legumes are an excellent source of Vitamin C and enzymes.
